Mango & Tofu Salad Bowl

Ingredients
  

1 large ripe mango, peeled and diced

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon fresh lime juice

1 teaspoon honey or maple syrup

1 cup mixed salad greens (arugula, spinach, or kale)

½ cup red cabbage, thinly sliced

½ cup cucumber, sliced

¼ cup red bell pepper, diced

2 green onions, finely chopped

¼ cup fresh cilantro, chopped

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

Prep the Tofu:

    - Cut the pressed tofu into cubes. In a medium bowl, whisk together 1 tablespoon of soy sauce, 1 tablespoon of olive oil, and a pinch of salt. Add the tofu cubes and toss to coat. Let marinate for at least 15 minutes.

      Cook the Tofu:

        - In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the marinated tofu cubes and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from heat and set aside.

          Make the Dressing:

            - In a small bowl, whisk together the remaining tablespoon of soy sauce, sesame oil, lime juice, honey (or maple syrup), and a pinch of black pepper until well combined.

              Prepare the Salad Base:

                - In a large salad bowl, layer the mixed salad greens, red cabbage, cucumber, red bell pepper, and marinated tofu.

                  Assembly:

                    - Drizzle the dressing over the salad bowl and gently toss everything together to combine.

                      Finishing Touches:
