Ingredients

1½ lbs Brussels sprouts, trimmed and halved

3 tablespoons olive oil

¼ cup Dijon mustard

¼ cup pure maple syrup

2 tablespoons balsamic vinegar

2 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese (optional, for a cheesy crust)

¼ cup chopped pecans or walnuts (optional, for added crunch)

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper for easy cleanup.

      Prepare the Brussels Sprouts:

In a large bowl, toss the halved Brussels sprouts with olive oil, ensuring they are evenly coated.

          Make the Sauce:

In a separate small bowl, whisk together the Dijon mustard, maple syrup, and balsamic vinegar. Add the minced garlic, salt, and black pepper, mixing until well combined.

              Combine:

Pour the maple Dijon sauce over the Brussels sprouts and toss until they are thoroughly coated in the sauce.

                  Bake:

Spread the Brussels sprouts in an even layer in the prepared baking dish. If using, sprinkle the grated Parmesan cheese and chopped nuts evenly over the top.

                      Roast:

Bake in the preheated oven for 25-30 minutes, or until the Brussels sprouts are tender and caramelized with a nice golden-brown color, stirring halfway through for even cooking.

                          Serve:

Once done, remove from the oven and let cool for a few minutes. Serve warm as a delightful side dish to your favorite main course.
