2 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Fresh parsley, chopped (for garnish)
