Maple Roasted Delicata Squash

2 medium delicata squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon ground cinnamon

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1/4 cup pecans, chopped (optional)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Squash: Carefully wash the delicata squash to remove any dirt. With a sharp knife, slice each squash in half lengthwise. Scoop out the seeds and any stringy fibers using a spoon.

      Slice the Squash: Cut each half into 1/2-inch thick half-moons. The skin of delicata squash is edible, so there's no need to peel!

        Mix the Glaze: In a large mixing bowl, combine the maple syrup, olive oil, ground cinnamon, sea salt, black pepper, and nutmeg. Whisk until well combined.

          Toss the Squash: Add the sliced delicata squash to the bowl and toss well, ensuring each piece is evenly coated in the maple mixture.

            Arrange on a Baking Sheet: Spread the coated squash in a single layer on a baking sheet lined with parchment paper for easy cleanup.

              Roast the Squash: Place the baking sheet in the preheated oven and roast the squash for about 25-30 minutes, or until the edges are caramelized and the squash is tender. Flip the pieces halfway through for even roasting.

                Add Pecans (Optional): If you're using pecans, sprinkle them over the squash in the last 10 minutes of roasting to toast them lightly.

                  Garnish and Serve: Once roasted, remove the baking sheet from the oven. Let it cool slightly and garnish with fresh thyme leaves if desired. Serve warm as a delicious side dish or a sweet vegetarian main.
