2 large whole wheat flatbreads (or pita bread)

1 cup hummus (store-bought or homemade)

1 cup diced cucumbers

1 cup diced tomatoes

1/2 cup sliced red onion

1 cup mixed greens (arugula, spinach, or lettuce)

1/2 cup crumbled feta cheese

1/4 cup sliced Kalamata olives

2 tablespoons olive oil

1 teaspoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Vegetables: In a medium bowl, combine the diced cucumbers, tomatoes, sliced red onion, and Kalamata olives. Drizzle with olive oil and lemon juice, and sprinkle with dried oregano, salt, and pepper. Toss gently to combine.

    Spread the Hummus: Lay out the whole wheat flatbreads or pita bread on a clean surface. Generously spread hummus on each flatbread, covering the entire surface.

      Layer the Fillings: On one half of each flatbread, add a layer of mixed greens, followed by the prepared vegetable mixture. Sprinkle crumbled feta cheese on top of the vegetables.

        Fold and Press: Carefully fold the flatbreads in half over the filling to create a sandwich. Press down gently to secure the ingredients.

          Heat (optional): If you prefer a warm sandwich, lightly grill the folded sandwiches on a skillet over medium heat for about 2-3 minutes on each side, or until the flatbread is golden and crispy.

            Slice and Serve: Cut the sandwiches in half diagonally and serve immediately. Enjoy with extra olives or a side of tzatziki sauce for dipping if desired.
