4 bone-in, skin-on chicken thighs

1/4 cup olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for heat)

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, rosemary, thyme, oregano, salt, black pepper, and red pepper flakes if using. Whisk together until well combined.

    Prepare Chicken Thighs: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to overnight for the best flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Arrange in Baking Dish: Remove chicken from the marinade and place them in a large baking dish. Pour any remaining marinade over the top. Scatter the halved cherry tomatoes and Kalamata olives around the chicken.

          Roast in the Oven: Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden. Baste the chicken with the pan juices halfway through cooking for extra flavor.

            Garnish and Serve: Once cooked, remove from the oven and let rest for 5 minutes. Garnish with freshly chopped parsley before serving.
