Ingredients

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), chopped

1 small red onion, finely sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Optional: 1 avocado, diced

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, and red onion. Gently toss to mix the colorful vegetables.

Add Olives and Feta: Stir in the Kalamata olives and crumbled feta cheese. Be careful not to break the feta too much; you want it to remain intact for texture.

Herb Infusion: Add the chopped parsley and mint to the mixture. These fresh herbs will enhance the Mediterranean flavors significantly.

Create the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning to your taste.

Combine and Chill: Pour the dressing over the salad and toss gently until everything is well coated. If you’re using avocado, fold it in carefully at this stage.

Let it Marinate: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. For the best taste, let it sit for 1-2 hours.

Serve: Give the salad a light toss before serving, and enjoy the refreshing burst of Mediterranean flavors!
