Ingredients

1 cup Gruyère cheese, shredded

1 cup Emmental cheese, shredded

1 clove garlic, halved

1 cup dry white wine (such as Sauvignon Blanc)

1 tablespoon cornstarch

1 tablespoon kirsch (cherry brandy) or lemon juice

1/2 teaspoon freshly grated nutmeg

Salt and pepper, to taste

Freshly baked bread cubes, assorted vegetables (broccoli, carrots, and bell peppers), and apple slices for dipping

Instructions

Prep the Fondue Pot: Rub the inside of a fondue pot with the halved garlic cloves for flavor. Discard the garlic.

Melt the Cheese: In a medium saucepan, combine the shredded Gruyère and Emmental cheese with the cornstarch. Toss together until the cheese is evenly coated.

Heat the Wine: Place the saucepan over medium heat and pour in the dry white wine. Stir gently as the wine begins to heat.

Combine Ingredients: Once the wine is warm (but not boiling), gradually add the cheese mixture, stirring constantly in a figure-eight motion. Allow the cheese to melt slowly to achieve a smooth consistency.

Thicken the Fondue: Once the cheese is melted, stir in the kirsch (or lemon juice) and freshly grated nutmeg. Season with salt and pepper to taste.

Transfer and Keep Warm: Carefully transfer the melted cheese mixture into the prepared fondue pot. Keep it warm over a low flame or candle to ensure a smooth texture throughout your fondue experience.

Serve: Arrange the bread cubes, assorted vegetables, and apple slices on a platter for dipping. Use fondue forks to dip and enjoy the rich, gooey cheese!
