Dough:

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon sugar

1/2 teaspoon salt

3/4 cup warm water

1 tablespoon olive oil

Filling:

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1/2 cup pepperoni slices (or choose your favorite toppings, like sautéed bell peppers or mushrooms)

1/2 teaspoon Italian seasoning

Salt and pepper to taste

For Brushing:

1 egg (beaten)

1 tablespoon olive oil

1/2 teaspoon garlic powder (optional)

Dipping Sauce:

1/2 cup marinara sauce

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine flour, instant yeast, sugar, and salt. Mix to combine.

      - Gradually add warm water and olive oil while stirring until a dough forms.

        - Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

          - Place in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 30-45 minutes, or until doubled in size.

            Make the Filling:

              - In another bowl, mix together mozzarella cheese, ricotta cheese, Parmesan cheese, pepperoni (or your chosen toppings), Italian seasoning, and a pinch of salt and pepper. Set aside.

                Assemble the Calzones:

                  - Once the dough has risen, punch it down and divide it into 6 equal pieces.

                    - Roll each piece into a 6-inch round on a floured surface.

                      - Spoon about 2-3 tablespoons of the filling onto one half of each dough round, leaving a small border.

                        - Fold the other half over the filling to create a half-moon shape and press the edges together to seal, making sure no filling escapes.

                          Prepare for Air Frying:

                            - Preheat your air fryer to 350°F (175°C).

                              - For a golden finish, brush each calzone with the beaten egg mixed with the olive oil and garlic powder, if using.
