Mini Breakfast Quesadilla Wedges

4 medium-sized flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red, green, or yellow)

1/2 cup cooked and crumbled breakfast sausage or diced cooked ham (optional)

1/4 cup chopped green onions

1/4 teaspoon garlic powder

1/4 teaspoon ground black pepper

Salt to taste

1 tablespoon olive oil or butter

Salsa or sour cream for serving

Prepare the Mixture: In a mixing bowl, whisk together the eggs, garlic powder, black pepper, and a pinch of salt until fully combined. Stir in the diced bell peppers, cooked meat (if using), and green onions.

    Cook the Egg Mixture: Heat a non-stick skillet over medium heat and add the olive oil or butter. Once hot, pour in the egg mixture. Stir gently and cook for about 3-5 minutes, or until the eggs are just set but still slightly soft. Remove from heat.

      Assemble Quesadillas: Lay a tortilla flat on a clean surface. Spread a quarter of the egg mixture evenly over half of the tortilla. Sprinkle with a quarter of the shredded cheddar cheese. Fold the tortilla in half to create a semi-circle. Repeat for the remaining tortillas.

        Cook Quesadillas: Wipe out the skillet and place it back over medium heat. Carefully add one quesadilla to the skillet and cook for about 2-3 minutes per side, or until golden brown and the cheese has melted. Use a spatula to flip the quesadilla. Remove from the skillet and let cool slightly before cutting into wedges.
