Ingredients

1 cup all-purpose flour

2 teaspoons baking powder

1 tablespoon sugar

½ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 cup cooked breakfast sausage, crumbled

4 large eggs

½ cup shredded cheddar cheese

¼ cup diced bell peppers (red, green, or both)

¼ cup diced onions

Salt and pepper to taste

Fresh avocado slices (for topping)

Salsa (for serving)

Fresh cilantro (for garnish)

Instructions

Preheat the Waffle Maker: Start by preheating your waffle maker according to the manufacturer's instructions.

Prepare Waffle Batter: In a mixing bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

Cook Waffles: Lightly grease the waffle maker with a cooking spray or brush with oil. Pour about ½ cup of waffle batter into the preheated waffle maker (the amount may vary depending on your waffle maker size). Close the lid and cook until golden brown and crisp, about 3-4 minutes. Repeat this process until you have 8 mini waffles.

Scramble the Eggs: In a skillet over medium heat, add a small amount of oil or butter. Sauté the diced onions and bell peppers until softened, about 3-4 minutes. In a bowl, whisk together the eggs, salt, and pepper. Pour the eggs into the skillet with the veggies and scramble until fully cooked and fluffy. Stir in the crumbled breakfast sausage and cook for an additional minute.

Assemble the Sliders: Take one mini waffle and layer with a spoonful of the egg and sausage mixture, followed by a sprinkle of cheddar cheese. Place another mini waffle on top to create a sandwich. Repeat for all sliders.

Serve: Place the mini breakfast taco waffle sliders on a serving platter. Top each slider with a slice of avocado and a dollop of salsa. Garnish with fresh cilantro for an extra burst of flavor.

Enjoy! These sliders are best enjoyed warm and can be served alongside extra salsa for dipping.
