1 medium cauliflower head, cut into florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup breadcrumbs (preferably whole wheat)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Olive oil spray (for baking)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Steam the cauliflower: In a large pot, fill with water and bring to a boil. Place the cauliflower florets in a steamer basket and steam for about 5-7 minutes, or until fork-tender. Remove from heat and let it cool slightly.

      Mash the cauliflower: Once cooled, transfer the steamed cauliflower to a large mixing bowl. Use a potato masher or fork to mash the cauliflower until it's mostly smooth.

        Mix in the ingredients: To the mashed cauliflower, add the shredded cheddar cheese, grated Parmesan cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully combined.

          Form the tots: Using your hands, scoop about one tablespoon of the mixture and form it into a small tot shape. Place each shaped tot onto the prepared baking sheet.

            Bake the tots: Spray the tops of the cauliflower tots lightly with olive oil spray. Bake in the preheated oven for about 20-25 minutes, or until the tots are golden brown and crispy on the outside, flipping them halfway through the baking time for even browning.

              Garnish and serve: Once baked, remove from the oven and let them cool for a couple of minutes. Garnish with freshly chopped parsley before serving.
