4 large flour tortillas

1 cup fresh basil pesto

2 cups shredded mozzarella cheese

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1/2 tsp red pepper flakes (optional)

Olive oil for brushing

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Tortillas: Place the tortillas on a clean surface. Spread a generous tablespoon of basil pesto over each tortilla, leaving a small border around the edges.

      Layer the Cheese and Toppings: Evenly sprinkle shredded mozzarella over the pesto on each tortilla. Then, add the halved cherry tomatoes and a sprinkle of grated Parmesan. For an extra kick, add garlic powder and red pepper flakes over the toppings.

        Roll and Slice: Carefully roll up each tortilla tightly. Once rolled, slice each tortilla into bite-sized pieces, about 1-inch thick. You should have about 12-15 slices per tortilla.

          Arrange on Baking Sheet: Line a baking sheet with parchment paper. Place the sliced tortilla bites upright (cut side up) on the sheet, ensuring they don’t touch to allow for even cooking.

            Brush with Olive Oil: Lightly brush the tops of the bites with olive oil for a golden finish.

              Bake: Bake in the preheated oven for about 15-20 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.
