Mini Chicken Parmesan Lettuce Wraps

Ingredients
  

1 pound ground chicken

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup marinara sauce (store-bought or homemade)

1 head Romaine or Butter lettuce, leaves separated

Olive oil spray

Extra Parmesan cheese for garnish

Fresh basil leaves for garnish (optional)

Instructions
 

Make the Chicken Mixture: In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, chopped parsley, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.

    Shape the Chicken Patties: Use your hands to form small, bite-sized patties from the chicken mixture, about 1-2 inches wide. You should get approximately 12-15 mini patties.

      Cook the Patties: Heat a non-stick skillet over medium heat and spray lightly with olive oil. Once hot, add the chicken patties and cook for about 4-5 minutes on each side, until they are golden brown and fully cooked (internal temperature should reach 165°F). Work in batches if necessary.

        Add Marinara Sauce: Just before removing the patties from the skillet, spoon a dollop of marinara sauce onto each patty and sprinkle an extra pinch of Parmesan cheese over the top. Allow the patty to warm the sauce slightly for about 1 minute.

          Assemble the Wraps: Remove the cooked chicken patties from the skillet and place them on a plate. Take a lettuce leaf, add one warm chicken patty to the center, and top it with additional marinara sauce, if desired. Garnish with fresh basil leaves and extra Parmesan cheese.

            Serve: Repeat the process for each lettuce wrap, serve immediately, and enjoy your Mini Chicken Parmesan Lettuce Wraps!
