Ingredients

For the Biscuit:

2 1/2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk

For the Chicken Filling:

1 pound cooked chicken, shredded (rotisserie works great)

1 cup queso cheese dip (store-bought or homemade)

1/2 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (optional)

For the Assembly:

Pickled jalapeños (optional, for spice)

Fresh avocado or guacamole (optional, for topping)

Instructions

Prepare the Biscuit Dough:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Mix well.

        - Add the cold cubed butter into the flour mixture. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

          - Gradually pour in the buttermilk while mixing until a soft dough forms. Do not overmix.

            Bake the Biscuits:

              - Turn the dough onto a floured surface and gently knead it just a couple of times. Pat it down to about 1-inch thickness.

                - Use a round cutter (about 2-3 inches) to cut out biscuit rounds. Place them on a baking sheet lined with parchment paper.

                  - Bake in the preheated oven for about 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

                    Prepare the Chicken Filling:

                      - In a mixing bowl, combine the shredded chicken with queso cheese dip, garlic powder, chili powder, salt, and pepper. Stir until the chicken is thoroughly coated in the mixture.

                        Assemble the Sliders:

                          - Once the biscuits are slightly cooled, slice them in half horizontally.

                            - Spoon a generous amount of the cheesy chicken mixture onto the bottom half of each biscuit.

                              - If desired, add pickled jalapeños and a dollop of guacamole on top of the filling.

                                - Place the top half of the biscuit over the filling to create a slider.

                                  Serve:

                                    - Serve the mini chicken queso biscuit sliders warm as an appetizer or part of a meal. They pair beautifully with a side of salsa or extra queso for dipping!
