1 tablespoon olive oil

1 packet taco seasoning (1 oz)

1 cup bell peppers, diced (mixed colors)

1 cup red onion, diced

1 cup shredded cheese (cheddar or a Mexican blend)

1 package flatbreads or pita breads (about 4-6)

1 cup sour cream or Greek yogurt

1 cup fresh salsa

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spatula.

      Add Seasoning and Vegetables: Stir in the taco seasoning and add the diced bell peppers and red onion. Cook for an additional 5-7 minutes until the vegetables are tender. Season with salt and pepper to taste.
