For the Chicken Marinade:

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tbsp tikka masala spice mix

1 tbsp lemon juice

1 tsp garlic powder

1 tsp ginger powder

Salt, to taste

For the Tikka Masala Sauce:

1 tbsp vegetable oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 thumb-sized piece ginger, grated

1 can (14 oz) crushed tomatoes

1 cup heavy cream or coconut milk (for a dairy-free option)

1 tbsp tikka masala spice mix

Salt and pepper, to taste

Fresh cilantro, for garnish

For the Wrap Bites:

4 large flour tortillas or naan bread

1 cup shredded lettuce

1/2 cup diced cucumber

1/2 cup shredded carrots

1/4 cup fresh cilantro leaves

Optional: lime wedges for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine yogurt, tikka masala spice mix, lemon juice, garlic powder, ginger powder, and salt. Add in the chicken pieces and mix well until they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove chicken from marinade and grill or sauté for about 8-10 minutes, flipping occasionally, until cooked through and slightly charred. Remove from heat and set aside.

      Prepare the Tikka Masala Sauce: In a large skillet, heat vegetable oil over medium heat. Add chopped onions and sauté until they turn golden brown. Stir in minced garlic and grated ginger, cooking for an additional minute.

        Add Tomatoes: Pour in the crushed tomatoes and bring to a simmer. Add the tikka masala spice mix, stirring to combine. Simmer for 10 minutes until slightly thickened.

          Finish with Cream: Reduce the heat to low, then stir in the heavy cream or coconut milk. Season with salt and pepper to taste. Allow to simmer for another 5 minutes. Add the grilled chicken to the sauce and coat evenly.

            Assemble the Wrap Bites: Warm the tortillas or naan bread slightly. Place a generous spoonful of the chicken tikka mixture on each wrap. Top with shredded lettuce, diced cucumber, shredded carrots, and fresh cilantro.

              Wrap and Serve: Roll up the tortillas into small wraps. If desired, slice each wrap into bite-sized pieces. Secure with a toothpick or simply serve as is. Garnish with lime wedges and enjoy your deliciously spicy bites!
