1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup buttermilk

1 teaspoon vanilla extract

2 teaspoons ground cinnamon

1/4 cup brown sugar, packed

1/2 cup powdered sugar (for icing)

1-2 tablespoons milk (for icing)

1/2 teaspoon vanilla extract (for icing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the melted butter, buttermilk, and vanilla extract until combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it’s fine if there are some lumps.

          Prepare Cinnamon Filling: In a small bowl, combine the ground cinnamon and brown sugar. Mix well.

            Fill Muffin Pan: Spoon about 1 tablespoon of the batter into each mini muffin cup. Then, sprinkle about 1 teaspoon of the cinnamon filling mixture over the batter. Top each with another tablespoon of batter, ensuring the filling is encased.

              Bake: Place the muffin pan in the preheated oven and bake for about 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

                Cool Down: Once baked, remove from the oven and let the mini cinnamon roll bites cool in the pan for about 5 minutes before transferring them to a wire rack.

                  Make the Icing: In a small bowl, whisk together the powdered sugar, 1 tablespoon of milk, and vanilla extract. Add more milk if necessary to achieve your desired icing consistency.
