8 large eggs

1 cup diced bell peppers (mixed colors)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup milk (or milk alternative)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Cooking spray or oil for greasing

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Muffin Tin: Lightly grease a standard muffin tin with cooking spray or a light coat of oil to prevent sticking.

      Whisk the Base: In a large mixing bowl, crack the 8 eggs and add the milk, salt, black pepper, garlic powder, and onion powder. Beat until well combined and slightly frothy.

        Add Vegetables and Cheese: Stir in the diced bell peppers, chopped spinach, halved cherry tomatoes, and shredded cheese until evenly distributed.

          Fill the Muffin Tin: Using a ladle or measuring cup, pour the egg mixture into each muffin cup, filling them about 3/4 full. Leave room for the eggs to rise as they cook.

            Bake to Perfection: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the egg muffins are set and lightly golden on top. You can test for doneness by inserting a toothpick; it should come out clean.

              Cool and Serve: Once baked, remove the tin from the oven and let it cool for a few minutes. Carefully run a knife around the edges of each muffin to loosen them, then gently remove them from the tin.

                Garnish and Enjoy: Serve warm, garnished with fresh herbs if desired, or allow them to cool completely before storing in an airtight container in the fridge for up to five days.
