Mini Grilled Veggie Bruschetta Toasts

Ingredients
  

1 French baguette, sliced into 1/2 inch rounds

1 medium zucchini, sliced into thin rounds

1 medium red bell pepper, chopped

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Optional: Crumbled feta or goat cheese for topping

Instructions
 

Preheat your grill or grill pan over medium-high heat.

    In a large mixing bowl, combine the zucchini, red bell pepper, red onion, cherry tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Toss until the veggies are well coated.

      Add the prepared veggies to the grill. Cook for about 8-10 minutes, turning frequently, until they are tender and have nice grill marks. Remove from heat and let them cool slightly.

        While the veggies are cooling, place the baguette slices on the grill and toast each side for about 2-3 minutes, until they are golden and crispy.

          Once the grilled veggies are cool enough to handle, chop them into smaller pieces if desired.

            Assemble the toasts by placing a generous spoonful of the grilled veggie mixture onto each toasted baguette slice.

              If desired, sprinkle crumbled feta or goat cheese on top, and then garnish with fresh basil.

                Serve immediately while the toasts are warm and crispy.
