1 pound ground beef (80/20 blend)

1 cup finely chopped cremini or button mushrooms

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon Dijon mustard

Salt and pepper, to taste

6 slices Swiss cheese, cut into quarters

12 mini slider buns

3 tablespoons olive oil

Fresh arugula or spinach, for garnish

Optional: garlic aioli or your favorite burger sauce

Sauté the Vegetables: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushrooms, diced onion, and minced garlic. Sauté for about 5-7 minutes, or until the mushrooms are golden and the onions are translucent. Season with a pinch of salt and pepper. Remove from heat and let cool slightly.

    Prepare the Beef Mixture: In a large bowl, combine the ground beef, sautéed mushroom mixture, Worcestershire sauce, soy sauce, Dijon mustard, and additional salt and pepper. Mix gently until just combined; avoid overworking the meat.
