4 whole wheat mini pitas

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese

1/2 cup sliced cherry tomatoes

1/2 cup sliced bell peppers (any color)

1/4 cup sliced red onion

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pitas: Place the mini pitas on a baking sheet lined with parchment paper.

      Spread Sauce: Evenly spread about 2 tablespoons of marinara sauce on each pita, leaving a small border around the edges.

        Add Cheese: Sprinkle a generous amount of shredded mozzarella over the sauce on each pita.

          Top with Veggies: Distribute sliced cherry tomatoes, bell peppers, and red onion evenly across the pizzas.

            Season: Sprinkle dried oregano, dried basil, garlic powder, salt, and pepper over the tops for added flavor.

              Drizzle with Olive Oil: Lightly drizzle a bit of olive oil on top of each mini pizza for a rich flavor and crispy texture.

                Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pitas are golden.

                  Garnish: Once out of the oven, let them cool slightly. Garnish with fresh basil leaves if desired before serving.

                    Serve: Slice into quarters (if desired) and serve warm as a fun appetizer or meal.
