For the Zaatar Chicken:

1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons zaatar spice blend

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

For the Mini Pita Pizzas:

6 mini whole wheat pitas

1 cup pizza sauce (homemade or store-bought)

1 ½ cups shredded mozzarella cheese

½ cup cherry tomatoes, halved

½ cup bell peppers, sliced thinly (any color)

¼ cup red onion, finely sliced

Fresh basil leaves for garnish (optional)

Balsamic reduction for drizzling (optional)

Prepare the Zaatar Chicken:

    Preheat your oven to 400°F (200°C). In a mixing bowl, combine olive oil, zaatar, garlic powder, salt, and black pepper. Add the chicken breasts to the bowl and rub the mixture thoroughly over the chicken. Let it marinate for at least 15 minutes.

      Cook the Chicken:

        Heat a skillet over medium-high heat and add marinated chicken breasts. Cook for about 6-7 minutes on each side or until the chicken is thoroughly cooked and has a nice golden color. Remove from the heat and let rest for a few minutes before slicing them into thin strips.

          Prepare the Pitas:

            While the chicken is resting, place the mini pitas on a baking sheet. Spread about 2 tablespoons of pizza sauce on each pita, leaving a small border around the edges.

              Add Toppings:

                Sprinkle shredded mozzarella evenly over the sauce on each pita. Top with sliced zaatar chicken, cherry tomatoes, bell peppers, and red onion.

                  Bake the Pita Pizzas:

                    Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden.

                      Garnish and Serve:
