Mini Pumpkin Donuts

Ingredients
  

1 cup all-purpose flour

1/2 cup pumpkin puree (canned or fresh)

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/4 cup buttermilk (or milk + 1 tsp lemon juice)

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon melted butter (for brushing)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a mini donut pan with cooking spray or butter.

    In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In a separate bowl, mix the pumpkin puree, buttermilk, egg, melted butter, and vanilla extract until smooth and well combined.

        Combine the wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are fine.

          Transfer the batter to a piping bag (or a zip-top bag with the corner snipped off) for easier filling of the donut pan.

            Fill each cavity of the donut pan about 2/3 full with the batter. This will allow the donuts to rise without overflowing.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into a donut comes out clean. The edges should be lightly golden.

                Once baked, remove the donuts from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack.

                  Prepare the cinnamon sugar coating: In a small bowl, mix together the sugar and cinnamon. Brush each warm donut with melted butter and then roll them in the cinnamon sugar mixture until evenly coated.

                    Serve warm or at room temperature for a delightful treat. Enjoy your mini pumpkin donuts with a cup of coffee or tea!
