1 medium spaghetti squash

1 cup marinara sauce (homemade or store-bought)

1 ½ cups fresh mozzarella cheese, shredded

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Prepare the Squash: Preheat your oven to 400°F (200°C). Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil, and season with salt and pepper. Place both halves cut-side down on a baking sheet lined with parchment paper.

    Roast the Squash: Roast in the preheated oven for about 30-35 minutes, or until the flesh is tender and easily scraped with a fork. Once done, let it cool slightly.

      Make the Filling: In a medium skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the marinara sauce, oregano, and basil. Let it simmer for about 5 minutes. Remove from heat.

        Combine Ingredients: Once the squash is cool enough to handle, use a fork to scrape the inside, creating spaghetti-like strands. Transfer the strands to a mixing bowl. Add half of the mozzarella and half of the Parmesan cheese to the squash, along with the marinara sauce mixture. Toss until combined.

          Assemble the Bowls: Carefully scoop the mixture back into the spaghetti squash halves. Top each filled half with the remaining mozzarella and Parmesan cheese.

            Final Bake: Return the stuffed squash to the oven and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
