Ingredients
  

1 pound ground beef (or turkey)

1 packet taco seasoning (about 1 ounce)

1 can (15 ounces) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 package wonton wrappers (about 48 wrappers)

1 small red onion, finely diced

1 avocado, diced (for topping)

1 cup shredded lettuce (for topping)

½ cup sour cream (for drizzling)

Fresh cilantro, chopped (for garnish)

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Meat: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat.

      Add Flavor: Stir in the taco seasoning along with 1/4 cup of water. Simmer for about 5 minutes until the mixture thickens slightly.

        Mix Other Ingredients: In a large bowl, combine the cooked meat with black beans, corn, diced tomatoes, and half of the shredded cheddar cheese. Mix until well combined.

          Prepare the Cups: Lightly grease a muffin tin with cooking spray or brush with olive oil. Take a wonton wrapper and gently press it into one of the muffin cups, forming a little cup shape. Repeat this process until all the cups are lined.

            Fill the Cups: Spoon the taco filling mixture into each wonton cup, filling them generously but not overflowing.

              Add Cheese: Top each filled cup with the remaining shredded cheddar cheese.

                Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are crispy and golden brown, and the cheese is bubbly.

                  Garnish: Remove from the oven and let cool for a couple of minutes. Carefully pop the taco cups out of the muffin tin. Top each cup with diced avocado, shredded lettuce, a drizzle of sour cream, and fresh cilantro.

                    Serve and Enjoy: Serve these delicious mini taco cups warm as a fun appetizer or snack at your next gathering!
