1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

2 tablespoons granulated sugar

4 cups all-purpose flour

1 teaspoon salt

1/4 cup baking soda (for boiling)

1 egg (beaten, for egg wash)

1 cup mozzarella cheese, cut into small cubes

Coarse sea salt, for sprinkling

1 tablespoon melted butter (optional, for brushing)

Instructions
 

Activate the Yeast: In a large bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes until it becomes frothy.

    Make the Dough: Add flour and salt to the yeast mixture. Mix until a rough dough forms, then knead for about 5-7 minutes on a floured surface until smooth and elastic.

      Proof the Dough: Place the dough in a lightly greased bowl, cover with a Clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour or until it has doubled in size.

        Prepare for Stuffing: Once risen, punch down the dough and turn it out onto a floured surface. Divide the dough into 12 equal pieces.

          Stuff with Mozzarella: Flatten each piece into a small circle, place a cube of mozzarella in the center, and fold the edges over to seal. Roll it into a smooth ball.

            Shape the Pretzels: Take each stuffed dough ball and roll it into a long rope (about 20 inches). Form it into a pretzel shape by crossing the ends and twisting them before pressing the ends onto the pretzel base.

              Boil the Pretzels: In a large pot, bring 8 cups of water to a boil. Gradually stir in baking soda (be careful of the bubbling). Carefully add the pretzels, boiling them for about 30 seconds on each side. Use a slotted spoon to remove them and place them on a parchment-lined baking sheet.

                Egg Wash and Bake: Preheat your oven to 450°F (232°C). Brush the boiled pretzels with beaten egg and sprinkle generously with coarse sea salt.

                  Bake to Perfection: Bake in the preheated oven for 12-15 minutes until golden brown. Brush with melted butter right after baking, if desired.
