8 oz (225g) mixed mushrooms (e.g., cremini, shiitake, or button), sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon soy sauce or tamari

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

4 slices of whole grain or sourdough bread

1 tablespoon lemon juice

Red pepper flakes (optional, for garnish)

Fresh parsley, chopped (for garnish)

Prepare the Mushrooms: In a skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the sliced mushrooms and sauté for about 5-7 minutes until they're browned and tender.
