2 slices of whole grain bread

1 ripe avocado

200g mixed mushrooms (e.g., cremini, shiitake, oyster), sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1 tablespoon soy sauce

Salt and pepper to taste

Juice of 1/2 lemon

Optional toppings: red pepper flakes, microgreens, or a poached egg

Instructions
 

Toast the Bread: Start by toasting the whole grain bread in a toaster or on a skillet until golden brown and crispy. Set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sauté them for about 5-7 minutes until they become tender and start to brown. Stir in the fresh thyme and soy sauce, and cook for an additional 2 minutes. Season with salt and pepper to taste. Remove from heat.

        Prepare the Avocado: While the mushrooms are cooking, slice the avocado in half and remove the pit. Scoop the flesh into a bowl and mash it with a fork, adding the lemon juice, salt, and pepper to taste.
