Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 can (21 oz) cherry pie filling

Fresh cherries for garnish (optional)

Mint leaves for garnish (optional)

Instructions

Prepare the crust:

    - In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.

      Form the base:

        - Evenly distribute the crust mixture into the bottom of individual serving cups or jars (about 8 to 10 cups, depending on size). Press down firmly to create a solid base. Place in the refrigerator to chill while you make the filling.

          Make the cheesecake filling:

            - In a large bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

              Whip the cream:

                - In a separate bowl, whip the heavy cream on high speed until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula until fully combined. Be careful not to deflate the whipped cream.

                  Assemble the cheesecake cups:

                    - Remove the graham cracker crusts from the refrigerator. Spoon or pipe the cheesecake filling evenly on top of the crusts in each cup.

                      Add the cherry topping:

                        - Gently spoon a generous amount of cherry pie filling over the cheesecake layer in each cup.

                          Chill and serve:

                            - Cover the cups with plastic wrap and refrigerate for at least 2 hours to set. Serve chilled and garnish with fresh cherries and mint leaves if desired.
