Ingredients

1 ½ cups rolled oats

1 cup almond butter (or peanut butter)

1 cup maple syrup or honey

½ cup unsweetened cocoa powder

½ teaspoon vanilla extract

½ teaspoon salt

½ cup dark chocolate chips (dairy-free, if desired)

¼ cup chopped nuts (walnuts, pecans, or almonds)

¼ cup shredded coconut (optional, for added texture)

Instructions

Prepare the Pan: Line a 9x9 inch square baking dish with parchment paper, leaving an overhang on the sides for easy removal later.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, and salt. Mix well to ensure even distribution of the cocoa powder.

Mix the Wet Ingredients: In a separate bowl, mix the almond butter, maple syrup (or honey), and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry oat mixture, and stir until all the oats are thoroughly coated and the mixture is well combined. You might need to use your hands for better mixing.

Add Mix-ins: Fold in the dark chocolate chips, chopped nuts, and shredded coconut (if using) until they are evenly distributed throughout the mixture.

Press into Pan: Transfer the mixture into the prepared baking dish. Press it down evenly and firmly using a spatula or your hands to create a smooth, even layer.

Chill: Place the baking dish in the refrigerator for at least 1-2 hours, or until the fudge bars are set and firm.

Cut into Bars: Once chilled, lift the fudge mixture out of the pan using the parchment overhang. Place it on a cutting board and cut it into squares or bars of your desired size.

Store: Store the bars in an airtight container in the refrigerator for up to one week. These bars can also be frozen for longer storage.
