Ingredients

1 cup dark chocolate chips (or semi-sweet if preferred)

1/2 cup creamy peanut butter

1/4 cup powdered sugar

1/4 teaspoon salt

1 teaspoon vanilla extract

12 mini cupcake liners

Sea salt for sprinkling (optional)

Instructions

Melt the Chocolate: In a microwave-safe bowl, add the dark chocolate chips. Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth. Be careful not to overheat.

Prepare the Liners: Place mini cupcake liners into a muffin tin to keep them stable. This will make it easy to fill them with chocolate.

Create the Chocolate Base: Using a spoon, add about 1 tablespoon of melted chocolate into the bottom of each mini cupcake liner. Use the back of the spoon to spread the chocolate evenly, covering the bottom completely. Put the tray in the freezer for about 10 minutes to set.

Make the Peanut Butter Filling: In a mixing bowl, combine the creamy peanut butter, powdered sugar, salt, and vanilla extract. Stir until well combined and smooth.

Add the Peanut Butter Filling: Once the chocolate base has set, remove the tray from the freezer. Spoon about 1/2 tablespoon of the peanut butter mixture onto the center of each chocolate layer. Gently spread it out, but try not to disturb the chocolate base.

Top with Chocolate: Pour another tablespoon of melted chocolate over the peanut butter filling in each liner, ensuring it is evenly coated. Use the back of the spoon to spread the chocolate if needed.

Set in the Refrigerator: Sprinkle a pinch of sea salt on top of each cup if desired. Place the tray back in the freezer or refrigerator to set for at least 20 minutes or until the chocolate is firm.

Serve & Enjoy: Once set, carefully peel the liners off the chocolate cups and serve them at room temperature. Enjoy your delicious no-bake chocolate peanut butter cups!
