2 cups chocolate cookie crumbs (like Oreos)

1/2 cup unsalted butter, melted

2 pints mint chocolate chip ice cream, softened

1 pint vanilla ice cream, softened

1 cup whipped cream (store-bought or homemade)

1/2 cup chocolate syrup (for drizzling)

Fresh mint leaves (for garnish, optional)

Chocolate shavings (for garnish, optional)

Instructions
 

Prepare the Crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust. Use the back of a measuring cup to compact it tightly. Place it in the freezer for 15 minutes to set.

    Layer the Ice Cream: Once the crust is set, remove it from the freezer. Using an ice cream scoop, layer the softened mint chocolate chip ice cream over the crust. Spread it evenly with a spatula. Return the pan to the freezer for about 20 minutes to firm up.

      Add Vanilla Layer: After the mint layer has set, add the softened vanilla ice cream on top of the mint layer. Smooth it out evenly with a spatula. Return the cake to the freezer for another 20-30 minutes.

        Final Layer of Whipped Cream: Once the vanilla layer is set, remove the cake from the freezer. Spread the whipped cream on top of the vanilla ice cream layer, creating a smooth surface. If desired, add a drizzle of chocolate syrup on top for added sweetness and decoration.
