Ingredients

1 cup rolled oats

1/2 cup natural peanut butter

1/4 cup honey or maple syrup

1/2 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup mini dark chocolate chips (optional)

1/4 cup dried fruits (raisins, cranberries, or chopped dates)

1/2 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Baking Tray: Line a muffin tin with cupcake liners or lightly grease it with cooking spray to prevent sticking.

Mix the Base: In a medium bowl, combine rolled oats, chopped nuts, and a pinch of salt. Stir until well combined.

Combine Wet Ingredients: In a separate microwave-safe bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract. Microwave for about 20-30 seconds or until it's just warm enough to stir smoothly. Mix until creamy.

Combine Mixtures: Pour the peanut butter mixture into the bowl with the oats and nuts. Add in the dried fruits and dark chocolate chips, if using. Stir until all the ingredients are well combined and coated.

Form the Cups: Spoon the mixture evenly into the muffin tin, pressing down firmly with a spoon or your fingers to create a compact layer.

Chill to Set: Place the muffin tin in the refrigerator for at least 1 hour, or until the granola cups harden.

Serve and Enjoy: Once set, carefully remove the cups from the muffin tin. Serve immediately, or store them in an airtight container in the fridge for up to a week.
