No-Bake Peanut Butter Oatmeal Bars

1 cup rolled oats

1 cup creamy peanut butter (or crunchy for extra texture)

1/2 cup honey or maple syrup

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (almonds, walnuts, or peanuts)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

Instructions
 

Prep the Pan: Line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal later. This will help prevent the bars from sticking.

    Mix the Wet Ingredients: In a medium-sized mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until well incorporated and smooth.

      Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, salt, and cinnamon (if using). Mix until all the dry ingredients are evenly distributed.

        Blend Together: Pour the peanut butter mixture into the dry ingredients. Use a spatula to mix thoroughly until all oats are coated with the peanut butter mixture.

          Add Extra Crunch: Fold in the dark chocolate chips and chopped nuts into the mixture, ensuring they are evenly mixed in.

            Press into Pan: Transfer the mixture to the prepared baking pan. Use the back of a spatula or your fingers to press the mixture down firmly and evenly into the pan. Make sure it’s compact to help the bars hold together when cut.

              Chill: Place the pan in the refrigerator for at least 1-2 hours, or until the mixture has firmed up.

                Cut and Serve: Once chilled, lift the bars out of the pan using the parchment paper overhang. Place on a cutting board and cut into squares or rectangles as desired.

                  Store: Keep any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
