1½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz (2 packages) cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the strawberry topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch mixed with 2 tbsp water

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly moistened. Press the mixture tightly into the bottom of a 9x9-inch (or similar size) square baking dish. Place in the refrigerator to set while you prepare the filling.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Add the sugar and vanilla extract, continuing to beat until fully combined and creamy (about 2-3 minutes).

      Whip the cream: In a separate bowl, whip the heavy cream on high speed until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream. The mixture should be light and airy.

        Assemble the cheesecake bars: Remove the crust from the refrigerator. Pour the cheesecake filling over the crust and spread evenly. Smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or until the filling is firm.
