Ingredients

1 ½ cups old-fashioned rolled oats

1 cup all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

½ cup chopped nuts (optional, such as walnuts or pecans)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, mix together the rolled oats, flour, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, continue to beat until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry oat mixture to the wet ingredients, stirring until just combined. Avoid overmixing.

Fold in Chocolate and Nuts: Gently fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the dough.

Spread in Pan: Pour the cookie dough into the prepared baking pan and spread it out evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center feels set. A toothpick inserted in the center should come out with a few moist crumbs.

Cool and Cut: Allow the bars to cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely. Once cooled, cut into squares or bars as desired.
