1 cup rolled oats

1 cup milk (or dairy-free alternative)

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup applesauce (unsweetened)

1/2 cup chopped nuts (walnuts or pecans)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a muffin tin with paper liners or greasing it lightly.

    Soak the Oats: In a medium bowl, combine the rolled oats and milk. Let them soak for about 10-15 minutes until the oats absorb some of the liquid and soften.

      Mix Wet Ingredients: In another large bowl, whisk together the brown sugar, honey (or maple syrup), vegetable oil, and egg until smooth. Stir in the applesauce.

        Combine Dry Ingredients: In a separate bowl, mix the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Ensure there are no lumps.

          Combine Mixtures: Add the soaked oats with milk to the wet ingredients and gently fold until combined. Then gradually stir in the dry ingredient mixture until just combined (do not overmix).

            Add Extras: Fold in the chopped nuts and raisins or cranberries if using.

              Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
