One-Pan Cheesy Beef and Rice Casserole

1 lb ground beef

1 cup long-grain white rice

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes (with juice)

2 cups beef broth

1 cup frozen corn

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened.

      Brown the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until browned (about 5-7 minutes). Drain any excess grease if necessary.

        Add Flavors: Stir in the minced garlic, smoked paprika, cumin, oregano, salt, and pepper. Cook for an additional 2 minutes until fragrant.

          Combine Ingredients: Add the rice, canned diced tomatoes (including juice), beef broth, and frozen corn into the skillet. Stir well to combine all the ingredients.

            Bring to a Boil: Increase the heat to medium-high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the skillet.

              Bake the Casserole: Transfer the covered skillet to the preheated oven. Bake for about 25-30 minutes or until the rice is fully cooked and most of the liquid has been absorbed.

                Add Cheese: Remove the skillet from the oven and sprinkle the shredded cheddar cheese evenly over the top. Place it back in the oven (uncovered) for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Once done, take the skillet out of the oven. Allow it to cool for a few minutes. Garnish with fresh cilantro or green onions if desired, then serve hot.
