1 lb (450g) ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes with juices

2 cups beef broth

1 tsp chili powder

1 tsp smoked paprika

½ tsp cumin

Salt and pepper to taste

1 cup shredded cheddar cheese (or a blend of your favorite cheeses)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until they begin to soften. Stir in the minced garlic and cook for an additional minute, until fragrant.

    Cook the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

      Add Spices: Stir in the chili powder, smoked paprika, cumin, salt, and pepper. Mix well to combine.

        Combine Ingredients: Add the rinsed rice, diced tomatoes (with their juices), and beef broth to the skillet. Stir everything together to ensure the rice is submerged in the liquid.
