1 lb ground beef

1 medium yellow onion, diced

3 cloves garlic, minced

1 cup long-grain white rice, rinsed

1 can (14.5 oz) diced tomatoes (with juices)

2 cups beef broth

1 cup frozen mixed vegetables (peas, corn, and carrots)

1 teaspoon Italian seasoning

½ teaspoon chili powder (optional)

Salt and pepper, to taste

1 ½ cups shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions
 

Heat the skillet: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for 2-3 minutes until translucent.

    Brown the beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook for about 5-7 minutes, or until browned completely. Drain any excess fat if necessary.

      Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

        Incorporate the rice: Add the rinsed rice to the skillet and stir well to combine with the beef and onions.

          Combine liquids and spices: Pour in the diced tomatoes (with their juices), beef broth, Italian seasoning, chili powder (if using), and season with salt and pepper. Stir everything together until well mixed.

            Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.
