1 lb (450g) ground beef

1 cup diced onion (about 1 medium onion)

2 cups diced bell peppers (mix of red, yellow, and green)

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 cup broccoli florets

1 tsp smoked paprika

1 tsp Italian seasoning

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup beef broth

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook for another 5-7 minutes until it's browned and no longer pink. Drain any excess fat if needed.

      Add Vegetables: Stir in the diced bell peppers, minced garlic, corn, and broccoli florets. Sauté for another 5 minutes until the veggies start to soften.
