1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (long grain or jasmine)

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese

Fresh parsley, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large oven-safe skillet, warm the olive oil over medium-high heat. Add the chicken pieces, seasoning with garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.

      Mix Ingredients: Stir in the uncooked rice and chicken broth. Mix well, then bring to a light simmer. Reduce the heat to low.

        Add Broccoli: Carefully fold in the broccoli florets and stir until just combined.

          Prepare Cheese Mixture: In a separate bowl, combine the sour cream and half of the cheddar cheese. Mix until smooth.
