1 lb (450g) boneless, skinless chicken thighs

2 cups mushrooms (cremini or button), sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

1 cup spinach (optional)

1 cup cooked rice or pasta (optional for serving)

Prepare the Chicken: Season the chicken thighs generously with salt, pepper, thyme, and rosemary.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken thighs and sear them for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the butter. Once melted, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes or until the mushrooms are tender and the onions are translucent. Stir in the minced garlic and cook for another minute until fragrant.
