4 boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and pepper, to taste

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 cup arborio rice (or long-grain rice)

4 cups chicken broth

1 cup heavy cream

1 cup frozen peas

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt and pepper on both sides. In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the chicken and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.

    Sauté the Aromatics: In the same pan, add the diced onion and sauté for about 3-4 minutes until translucent and fragrant. Add the minced garlic, thyme, and smoked paprika, stirring for an additional minute until the garlic is fragrant.

      Toast the Rice: Stir in the arborio rice, coating it with the onion and garlic mixture. Cook for about 2 minutes, allowing the rice to toast slightly.

        Add the Broth: Pour in the chicken broth and bring the mixture to a gentle simmer. Scrape any browned bits from the bottom of the pan to incorporate all the flavors.
