2 cups (150g) sliced mushrooms (button or cremini)

4 cloves garlic, minced

1 medium onion, diced

1 cup (240ml) vegetable broth

1 cup (240ml) heavy cream (or a dairy-free alternative)

1 cup (100g) grated Parmesan cheese (or nutritional yeast for vegan option)

2 tbsp olive oil

1 tsp Italian seasoning

¼ tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Sauté the Vegetables: In a large skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes.

    Add Garlic and Seasonings: Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using). Sauté for an additional 1-2 minutes until the garlic is fragrant but not burnt.
