Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (adjust for heat preference)

1 teaspoon sugar (to balance acidity)

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

1 cup cooked pasta (penne or fettuccine works well, optional for serving)

Instructions

Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts. Sear for about 5-6 minutes on one side until golden brown, then flip and cook for another 5 minutes, until cooked through. Remove the chicken from the skillet and set aside.

Sauté Garlic: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

Make the Sauce: Add the diced tomatoes (with juices), heavy cream, Italian seasoning, red pepper flakes, and sugar to the skillet. Stir well to combine and let it simmer for about 2-3 minutes until the sauce is well mixed and slightly thickened.

Add Cheese and Basil: Stir in the grated Parmesan cheese and chopped basil until the cheese melts into the sauce, creating a creamy texture.

Combine Chicken and Sauce: Return the chicken to the skillet, spooning the sauce generously over each piece. Let it simmer in the sauce for an additional 3-4 minutes to absorb flavors.

Serve: If desired, serve the creamy tomato basil chicken over the cooked pasta and garnish with additional fresh basil and Parmesan. Enjoy your delicious one-pan meal!
