Ingredients

1 lb pork tenderloin, sliced into 1-inch medallions

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Pork: Pat the pork medallions dry with paper towels. Season both sides with salt and pepper.

Set Up the Breading Stations: In a shallow bowl, whisk the eggs until smooth. In another shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.

Bread the Medallions: Dip each pork medallion first into the egg, letting any excess drip off, then coat thoroughly in the Parmesan-panko mixture. Press firmly to ensure the coating adheres well.

Heat the Pan: In a large skillet, heat the olive oil and butter over medium heat. Once the butter has melted and is bubbling, carefully place the breaded medallions in the pan in a single layer, ensuring not to overcrowd. You may need to do this in batches depending on the size of your pan.

Cook the Medallions: Cook the medallions for about 4 to 5 minutes on each side, or until they are golden brown and crispy, and the internal temperature reaches 145°F (63°C). Adjust the heat as necessary to prevent burning.

Drain and Serve: Once cooked, transfer the medallions to a plate lined with paper towels to absorb any excess oil. Garnish with freshly chopped parsley and serve with lemon wedges on the side for a zesty finish.

Enjoy Your Meal: Pair these crispy medallions with a side salad, roasted vegetables, or mashed potatoes for a complete meal.
