4 boneless, skinless chicken thighs

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups baby potatoes, halved

1 cup carrots, sliced

1 cup green beans, trimmed

Fresh thyme leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a small bowl, whisk together the honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Place the chicken thighs in a large sealable bag or dish, and pour the marinade over them, ensuring the chicken is well-coated. Let it marinate in the fridge for at least 30 minutes to 1 hour (or overnight for more flavor).

      Prepare Vegetables: In a large mixing bowl, toss the halved baby potatoes, sliced carrots, and green beans with a drizzle of olive oil, salt, and pepper. Make sure the veggies are well-coated.

        Assemble on a Baking Sheet: Take a large rimmed baking sheet or pan and spread the marinated chicken thighs in the center. Arrange the seasoned veggies around the chicken in a single layer.

          Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 75°C) and the veggies are tender and slightly caramelized.
