One-Pan Lemon Garlic Shrimp and Veggies

1 pound large shrimp, peeled and deveined

2 cups broccoli florets

1 cup bell peppers, sliced (red and yellow for color)

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish

Lemon wedges, for serving

Preheat the Pan: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

    Sauté the Veggies: Add the broccoli florets and bell peppers to the skillet. Season with salt, pepper, and oregano. Sauté for about 4-5 minutes until they start to soften.

      Add Garlic and Shrimp: Push the veggies to one side of the pan. Add the minced garlic to the other side and sauté for 30 seconds until fragrant. Then, add the shrimp to the skillet.

        Season the Dish: Sprinkle the smoked paprika, lemon zest, and a pinch of salt and pepper over the shrimp. Pour the lemon juice over everything.

          Cook the Shrimp: Let the shrimp cook for 3-4 minutes, stirring occasionally, until they turn pink and opaque. The veggies should be tender-crisp.

            Finish and Serve: Drizzle the remaining tablespoon of olive oil over the dish and toss everything together gently. Remove from heat. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
