One-Pot Beef and Cheddar Ranch Pasta

Ingredients
  

1 lb (450g) ground beef

1 small onion, diced

3 cloves garlic, minced

2 cups (480ml) beef broth

1 cup (240ml) whole milk

1 packet (1 oz / 28g) ranch dressing mix

8 oz (225g) penne pasta

1 cup (100g) sharp cheddar cheese, shredded

1 cup (100g) mozzarella cheese, shredded

1 cup (150g) frozen peas (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

    Add the minced garlic and ground beef to the pot. Cook until the beef is browned, breaking it apart with a wooden spoon, approximately 5-7 minutes. Season with salt and pepper.

      Pour in the beef broth and whole milk, stirring to combine with the beef mixture.

        Sprinkle in the ranch dressing mix, ensuring it is well incorporated into the liquid.

          Bring the mixture to a gentle boil, then add the penne pasta. Stir well and reduce the heat to a simmer.

            Cover the pot and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

              If using, stir in the frozen peas during the last 3 minutes of cooking.

                Remove the pot from heat and mix in the shredded sharp cheddar and mozzarella cheese until melted and creamy.

                  Taste and adjust seasoning with salt and pepper if needed.

                    Garnish with chopped fresh parsley before serving hot.
